Really, a new ship or two will not fix your problem anyway. A lot of newer players get frustrated because they want to matter in the world, then go to something like 0.0 and see they're small fry and might one day get to be medium fry. You, apparently, have the capital, the skill points, and the boredom required to do something crazy and shake things up.
If all you want is pipe dreams of new toys, say so. Start a "What should Jove tech ships be like" thread and daydream about it, but if you want the game to be exciting and don't want to leave it finding something epic to do is the key.
Hell, offer to pay for PLEX's each month and a salary for pilots to come work for you. It'd be like an army of bots, but legal.

The only realistic expansion to skills that would be something really limited to 100m+ characters is as follows - Ships - tech 2 capitals and actual, legitimate 'death stars'. The death star could even be used Yeven style once all the kinks in PI are worked out, it would just not be something that could easily move.
Production - More introduction of player ability to construct all items. As far as I know things like sov structures are still seeded, and stargate construction could open up possibilities. Tying some PI structures, equipment, upgrades, whatever to higher SP skills could also result in interesting possibilities, ie maxed planetary skills, clone bay operation V, and infomorph psych V could allow you to build cloning facilities on your planet.
Exploration - This one's obvious. Interstellar probing + jump capable scout ships + non-binary systems. High skills necessary to get there and back, but you can drag your friends along. More isolated space, but no stargate installation would be an interesting experiment in system control and PvP.
Just random thoughts from the two high SP threads cropping up.
